Bacharach at the Rhine river has been known for winegrowing since centuries. Marc Behrens recorded the fermentation processes of various wines in wooden barrels and stainless steel tanks at the Marco Hofmann and Ratzenberger wineries there. The microphone was sometimes placed directly at the bunghole where gases evaporate through old ceramic and stoneware fermentation locks or through modern glass tube airlocks. The sounds of the gas bubbles almost resemble tuned percussion. The murmuring cellar acoustics, the hissing noises in the fermenting liquids and the materiality of the tanks set contrasts to the gurgling and bubbling of the gases, an active soundscape seemingly reminiscent of the uterus.

The processes involved in wine production and the composition of an audio piece are alike: from the harvesting of the sound recordings and the “maturation” of the sounds to the audible end result on the radio. The winemaker repeatedly checks and tastes the wines in their barrels and tanks, measuring their sugar or acidity levels. Behrens tested earlier versions of his audio piece in a very similar way during trial runs at the Stahlberg castle ruins, in the middle of the Bacharach vineyards.
